~1 min readThe Robotic Kitchen Operations General Manager is tasked with owning the operational performance and unit economics of Lab37’s internal test-brand pilot locations and building the scalable SOPs, training, and management systems required to replicate the model across future corporate and franchise locations.

~1 min read- →P&L & KPI ownership: Drive profitability and performance across operational KPIs including COGS, throughput, accuracy, waste, uptime, and ratings.
- →Team building and leadership: Hire/train/certify site leads and kitchen team; set hours (up to 24/7), coverage and escalation; ensure accountable execution of food safety, compliance, inventory discipline, and incident response.
- →Labor model design: Continuously evolve role design, skill mix, and staffing models to maximize operating efficiency; define incentive plans tied to uptime, accuracy, throughput, and quality.
- →End-to-end operations: Partner with facility ops on order execution and handoff to optimize speed, quality, and reliability.
- →Operations reporting & RCA: Manage dashboards, reporting, daily/weekly reviews, root-cause analysis, and corrective actions with ops, product, and engineering.
- →Cross-functional collaboration: Partner with culinary + engineering teams to improve recipes, tools, reliability, usability, and task management; translate operational pain into clear requirements.
- →Scalable SOPs: Standardize deployment-ready workflows (SOPs, checklists, training/certification) and package into repeatable playbooks (roles, staffing, audits, KPI cadence) for future sites/franchise partners.
- →Drive local demand: Own demand generation and growth initiatives (e.g., guerrilla campaigns), platform merchandising, menu/LTO launches, and promos/pricing execution; design scalable change management for menu and operations updates.
- →Launch & expansion: Lead platform onboarding, openings, and stabilization with partners; travel as deployments expand.
- 7–10+ years of relevant experience in high-throughput QSR/fast-casual/delivery-first operations, including direct ownership of store-level performance; multi-unit experience strongly preferred.
- Demonstrated ownership of core operational levers: labor modeling, COGS, waste/shrink, throughput/latency, order accuracy, and customer ratings.
- Proven track record building scalable SOPs, training programs, and performance management systems that hold up across shifts and teams.
- Strong analytical/operator mindset; fluency in spreadsheets and operational reporting.
- Ability to develop and refine operating procedures from first principles in new or ambiguous environments.
- Experience partnering cross-functionally with product/engineering and culinary teams to improve tooling, workflows, and reliability.
- Proven ability to hire, manage, and develop teams (including entry-level staff and shift leaders) while maintaining high standards.
- Located in LA, with a willingness to work variable hours and travel as deployments expand.

The base salary range for this role is $140,000 - $180,000 per year.
Actual compensation will be determined on an individual basis and may vary depending on experience, skills, and qualifications.
Base salary is just one part of your total rewards package. You may also be eligible for equity awards and an annual performance-based bonus.
