JOB SUMMARY

Provide friendly, attentive, and timely service to create an exceptional experience for all of our guests. The primary objective of the bartender is to provide exceptional service, to encourage guests to return. 


SCOPE

Under the directive of the Restaurant Supervisor or Bar Supervisor, the Bartender is expected to serve guests the highest quality beverages utilizing outstanding mixologist skills in a timely manner.


RESPONSIBILITIES

  • Always promotes him/herself in keeping with the high standards of appearance and conduct.
  • Takes a personal interest in ensuring the 5 diamond AAA standards are always sought after and maintained and exceeded.
  • Responsible for advising immediately, the Restaurant Manager or any other appropriate department head, anything which is considered to be a health or safety hazard.
  • Be knowledgeable of the hotel facts, facilities, and amenities eg. the gym, kids club, teen lounge and business center. Encompassing the product available within the Montrose and Ocean Hotels Group.
  • Must be able to multitask.
  • Must be able to take food and beverages orders if necessary.
  • Must be able to take beverage orders from colleagues. 
  • Must prepare and serve beverages consistently with the company issued drink recipes.
  • Be acquainted with the names of regular guests.
  • Record drink orders accurately and immediately after receipt into the register system (where applicable).
  • Assist with planning and presenting of bar menus. 
  • Accept guest payment, process credit card charges and make change (where applicable).
  • Prepare garnishes for drinks and replenish bar snacks for bar patrons.
  • Maintain bottles and glasses in an attractive and functional manner to support efficient drink preparation and promotion of beverages. 
  • Ensure all glasses are washed, sanitised and shined daily.
  • Clear, clean and reset tables in the bar area.
  • Assess customer needs and preferences while making specific recommendations and answering questions regarding food, snacks and beverages.
  • Serve food, snacks and drinks to customers in a friendly and professional manner.
  • Maintain cleanliness in all areas of the lounge and bar including counters, sinks, utensils, shelves and storage areas.
  • Receive and serve food orders to guests. ( where applicable)
  • Monitor operating supplies, equipment and reduce spoilage and wastage.
  • Report all equipment problems and bar maintenance issues to the supervisor on duty.
  • Assist the restocking and replenishment of bar inventory and supplies.
  • Thank guests for their visit and invite them to return.
  • Attend all scheduled employee meetings and offer any suggestions for improvement.
  • Must have the ability to up-sell 
  • Provide guidance to guests on resort activities, dining options and general resort and regional information.
  • Should be able to observe when a customer has had too much alcohol and if required refuse any further serving in a polite way.
  • Demonstrate a thorough knowledge of food and beverage products, menus and promotions.
  • Prepare inventory or purchase requisitions as needed to replenish supplies.
  • Ensure that the assigned bar area is fully equipped with tools and products needed for Mixing beverages and serving guests. 
  • Must operate in full compliance with Ocean Hotels and AAA standards.
  • Mix and prepare beverages as ordered and in compliance with hotel standard drink recipes.
  • Comply with all food and beverage and health and safety regulations.
  • To attend and participate in any training programs as directed by the HR team and Restaurant Manager.
  • To attend Fire/ Emergency Training Program and to ensure that the hotel's and department's fire and emergency procedures are understood.
  • To comply with all hotel procedures and protocols related to COVID 19 and infectious diseases.
  • As flow of business dictates you will be asked to work overtime or be given additional responsibilities through the shift. 
  • To thoroughly review and understand the information contained within the Ocean Hotels Employee handbook since as an employee of Ocean Hotels Barbados, you are governed by the rules and stipulations contained within.
  • To actively participate in an evaluation of your performance by means of an appraisal with your leadership team. In order to correct weaknesses, encourage strengths and work to achieve personal and professional goals.
  • Perform physical activities such as lifting and stooping.
  • Perform other duties as assigned by the hotel management.
  • In addition to the duties which this job normally entails, you will be required to be completely flexible in the position and must be prepared to undertake  other work that may be assigned to you by the company from time to time. This can entail tasks outside the area of your normal duties.
  • To be totally security conscious, being aware of any unregistered guests, lurkers, and your general surroundings. Advising the security team of such.



KNOWLEDGE, SKILLS AND PERSONAL ATTRIBUTES

Knowledge

The Bartender must have proficient knowledge in the following areas:

  • Must be efficient in cash handling procedures and operation of a point-of-sale system.(where applicable)
  • At least three years of bartending experience in a high-volume bar or restaurant.
  • Level 3 or above Caribbean Vocational Qualification in Bartending and Mixology
  • A vast knowledge in alcoholic and non-alcoholic drinks.
  • Need to have a good understanding of Food & Beverage safety laws and best practices. 
  • Knowledge of Food & Beverage hygiene.   
  • Inspection procedures for food and beverage. 
  • Knowledge of Bar Equipment and its usage.
  • Knowledge of the products that are served.
  • Knowledge of Drink Recipes. 
  • Understand, speak, read and write English at CXC level or equivalent.
  • Basic knowledge of food presentation, preparation and handling. 



Skills

The Bartender must demonstrate the following skills:

  • Effective verbal and listening communications skills.
  • Effective written communications skills.
  • Basic computer skills. 
  • Must be able to stand for extended periods of time.
  • Must be able to lift up to 20 pounds. (lifting above the shoulder is also required)
  • Ability to relate well to hotel guests and employees.
  • Ability to understand and carry out oral and written instructions and request clarification when needed.
  • A positive attitude and outgoing personality is essential.
  • Must be able to work shifts. (days, evening, weekends, holidays)
  • Must be able to cultivate positive relationships with hotel guests to make their experience memorable. 
  • Must possess the ability to communicate effectively and warmly with guests. Strong interpersonal skills are necessary to be successful.
  • Able to work with minimum supervision.
  • Demonstrate the capacity to deliver a high standard of customer service throughout your shift. 
  • Must be professionally groomed and able to work in a standing position for long periods of time.
  • Attention to detail and high level of accuracy.
  • Time management skills.
