The Brasserie is an award-winning 80-seat fine dining restaurant in Grand Cayman with a fantastic reputation for its farm-to-table cuisine. Adjoining the restaurant is an upscale bistro-style market and coffee shop, an outdoor juice bar, and a quick, casual open air, fire grill BBQ.
We are looking for a passionate Pastry Cook to join our team. This role involves preparing high-end desserts, à la carte items, and homemade breads and pastries while following recipes and company standards to ensure top quality.
Under the guidance of the Pastry Chef, Sous Chef, and Head Chef, you will maintain a clean, organized workstation, adhere to food safety regulations, and uphold hygiene standards. Responsibilities also include proper food storage, equipment maintenance, and effective teamwork to ensure smooth kitchen operation.

Key responsibilities are, but not limited to:
- Preparing high-end desserts, à la carte menu items, and homemade-style breads and pastries, including muffins, scones, cupcakes, cookies, and breakfast breads.
- Preparing all menu items according to recipes and yield guides while following company standards.
- Following the Pastry Chef’s instructions and directions.
- Maintaining a clean and safe workstation at all times.
- Taking direction from the Sous Chef, Senior Sous Chef, and Head Chef.
- Ensuring that the production, preparation, and presentation of food meet the highest quality standards, maintaining guest satisfaction, quality, and cost efficiency.
- Properly and safely maintaining the cleanliness and functionality of all tools, equipment, and supplies.
- Regularly checking the expiry dates and proper storage of food items in your section.
- Strictly adhering to Cayman Islands sanitation, health, and safety laws.
- Following proper preservation standards for handling and storing food at appropriate temperatures.
- Maintaining effective communication among staff in a secure and friendly environment.
- Establishing and maintaining strong interdepartmental working relationships.
- Serving customers in a pleasant and professional manner.
- Learning about menu items and daily specials to effectively present them to customers.
- Keeping your workspace, equipment, and utensils clean and organized at all times.
- Upholding the company’s cleanliness standards.
- Maintaining an immaculate personal presentation and uniform at all times.
- Adhering to all relevant health, safety, and hygiene standards.
- Staying organized and effectively managing your workspace.
- Providing feedback and reporting issues as they arise.
- Consistently displaying a positive, "can-do" attitude.
- Performing other related duties as assigned by management.
- Carrying out any additional tasks required by management.
The successful candidate will have:
- Minimum of 2 years proven experience in preparing high-end desserts, à la carte menu items, and homemade-style breads and pastries (e.g., muffins, scones, cupcakes, cookies, breakfast breads).
- Ability to follow recipes and yield guides while maintaining company standards.
- Knowledge of food preparation techniques and ability to consistently produce high-quality items.
- Ability to maintain and properly clean tools, equipment, and supplies in a safe working condition.
- Experience in managing food storage, including checking expiry dates and ensuring proper storage procedures.
- Strong organizational skills to keep the workspace, equipment, and utensils clean and tidy.
- Immaculate personal presentation and uniform standards at all times.
- Adherence to all relevant health, safety, and hygiene standards.
- Ability to stay organized and manage your workspace efficiently.
- Strong feedback skills to report issues and continuously improve operations.
- Positive, proactive attitude with a “can-do” approach.
- Flexibility to perform additional duties and tasks as assigned by management.
Base salary: Starting at CI$900.00 to $1,175.00 per pay period, paid bi-weekly, including shares in our gratuity pool, plus a competitive compensation package commensurate with relevant experience and qualifications.
