Reports directly to: Manager, ARC, Residential Treatment Facility
The Residential Treatment Facility Lead Cook within this Department serves at the facility staff level and is selected by the ARC Manager and administrative panel after having met the requisite education, training, and experience criteria set out in this job description.
The individual is not responsible for the supervision of employees.
Applicant is hired under the legal doctrine of employment at will.
Responsibilities

• Prepare the orders for meat, produce, kitchen and other supplies including all custodial, janitorial, and maintenance items needed at the ARC;

• Consult with management and dieticians to determine appropriate menus;
- →
• Maintain inventory of foods, kitchen equipment and other supplies;
- →
• Prepare food to be served complying with applicable sanitation, health and personal hygiene standards and following established food production programs and procedures;

• Responsible for appropriate use of facility supplies and equipment to minimize loss, waste and fraud;
- →
• Supervises residents assigned to work kitchen detail;
- →
• Responsible for insuring kitchen and dining areas are cleaned after each meal.
• Ability to maintain effective working relationships with staff personnel; follow written and verbal instructions; and communicate effectively orally and in writing;
• General knowledge of meal planning and food preparation;
• General knowledge of ordering and maintaining kitchen supplies, equipment and food inventories;
• General knowledge necessary to safely and efficiently operate kitchen equipment and machines (including but not limited to: oven, stove, slicer, coffee machine, steamer, mixer and knives) used in the performance of this job.
• Ability to prepare and serve food in compliance with applicable sanitation, health and personal hygiene standards and follow established food production programs and procedures.
A high school diploma or GED equivalent is required;
• Two (2) years’ experience in food service required;
• One (1) year experience dealing with menu preparation, ordering food stuffs and maintaining kitchen inventory is highly desirable;
• Must possess Food Service Manager Certification or obtain within the first 60 days of employment;
• Must obtain Health Department Food Handling license or card.

Subject to sitting, standing, walking, reaching, twisting and handling to perform the essential job functions.
Applicant must possess a valid Texas Driver’s license.
Applicant must pass and maintain a favorable criminal background check.
Applicant must clear a pre-employment physical and urinalysis test.
Applicant must possess a valid Texas Driver’s license.
Working conditions are primarily inside a residential facility kitchen environment. Individual may be exposed to temperature variations and cramped areas.
Exposure to controlled correctional environment and potential risk of bodily injury and/or hazardous conditions may exist. Individual will work in the proximity of some residents who could be considered dangerous.
Work in the proximity of individuals who may have been convicted of felony and/or misdemeanor offenses. Individual may have daily contact with the public, outside agencies and support networks concerning kitchen services available to residents.
Individual may be required to be on-call 24 hours.
Individual may be required to work a flexible schedule and more than 40 hours during the workweek.
