NS Group is seeking a creative and technically accomplished Pastry Chef for a luxury hotel in Zanzibar. The role is responsible for managing all pastry and bakery operations, overseeing the production of desserts, pastries, breads, and confectionery items, and leading the pastry team to deliver outstanding sweet dining experiences that align with the hotel's luxury culinary standards. The ideal candidate should possess advanced pastry and baking skills, strong creative flair, exceptional attention to detail, and the ability to lead and inspire a pastry team within a high-end hospitality environment.
Responsibilities
~2 min read- →Manage and oversee all daily pastry and bakery production activities including desserts, cakes, pastries, breads, chocolates, sugar work, and confectionery items, ensuring consistent quality, precision, and exceptional presentation standards are maintained across all pastry output.
- →Lead, supervise, and mentor the pastry team including Pastry Assistants and Commis Chefs, providing hands-on technical training, creative direction, and regular performance feedback to maintain a skilled, motivated, and high-performing pastry brigade.
- →Design, develop, and execute innovative dessert menus, seasonal pastry offerings, signature sweet creations, and themed confectionery displays in collaboration with the Executive Chef, ensuring all items align with the hotel's luxury culinary brand and guest preferences.
- →Plan and manage daily pastry production schedules and mise en place activities, ensuring all desserts, pastry components, bread varieties, and confectionery items are fully prepared, portioned, and ready ahead of each service period, buffet setup, and special event.
- →Monitor the quality, taste, texture, temperature, and visual presentation of all pastry and bakery items leaving the section during service and buffet periods, ensuring every item consistently meets the hotel's luxury dining standards and guest satisfaction expectations.
- →Maintain strict food safety, hygiene, temperature control, and sanitation standards throughout the pastry section at all times, ensuring full compliance with HACCP regulations, hotel health and safety policies, and applicable food handling legislation.
- →Manage pastry section inventory, conduct regular stock checks on all pastry ingredients and supplies, oversee correct storage and rotation of perishable items, and minimise wastage through accurate production planning and efficient ingredient utilisation.
- →Oversee the production of showpiece desserts, chocolate sculptures, sugar displays, and decorative pastry centrepieces for special events, themed dinners, weddings, and luxury banquet functions hosted by the hotel.
- →Collaborate closely with the Food & Beverage team, event coordinators, and restaurant managers to align pastry offerings with dining reservations, special event menus, themed buffets, and guest dietary requirements.
- →Conduct regular pastry team briefings to communicate production priorities, menu updates, special event requirements, allergen information, and service expectations ahead of each service period and special function.
- →Ensure all pastry section equipment including ovens, proofing chambers, mixers, tempering machines, and blast chillers is properly operated, cleaned, and maintained in safe working condition, reporting any faults or maintenance requirements promptly.
- →Stay current with global pastry trends, new techniques, innovative ingredients, and luxury dessert concepts, incorporating relevant developments into the hotel's pastry offerings to maintain a contemporary and exceptional sweet dining experience.
Requirements
~1 min read- Certificate, Diploma, or Bachelor's Degree in Pastry Arts, Culinary Arts, Baking and Patisserie, or a related field is required.
- Minimum 4–6 years of progressive pastry experience within a luxury hotel, resort, or fine dining establishment is required.
- Proven experience in a Pastry Chef or Senior Pastry Chef de Partie leadership role is required.
- Advanced knowledge of pastry techniques including chocolate work, sugar crafting, bread baking, viennoiserie, entremets, and plated dessert construction is required.
- Strong creative ability and artistic flair for dessert presentation, showpiece design, and luxury pastry menu development is required.
- Solid understanding of food safety, HACCP regulations, temperature control, and kitchen hygiene standards is required.
- Experience in designing and executing pastry menus for luxury buffets, weddings, themed events, and fine dining service is preferred.
- Candidates from NCT and other hospitality institutes are encouraged to apply.
- Multilingual candidates will have an added advantage.
- Proficiency in English communication is required.
