a. Quality and Quantity checks are made for all ingredients received from the Stores Department daily.
b. Fruits and vegetables are washed, rinsed, sanitized, scraped or peeled as needed and are prepared as per customer specifications and stored in bins or on trays.
c. All prepared fruits and vegetables are covered, labeled, date stamped, color coded and stored in the refrigerator immediately.
d. All unused fruits and vegetables are packed in appropriate storage equipment and placed in the refrigerator at the end of day.
e. All stored food allergens must be declared, labeled, dated, covered and stored as per the allergen policy.
f. All decanted food items are packed in appropriate storage equipment, covered, labeled, date stamped, color coded and stored in the refrigerator immediately.
a. All assignments are carried out to agreed standards.
b. Assist with events catering where applicable as per the Union Contract.

a. Temperature of “potentially hazardous foods (PHFs)” are taken and documented during assembly, loading of the catering vehicles and just before loading the flight.
b. Internal cooking temperature of prepared foods are checked and logged on the appropriate HACCP record.
a. A sample meal (gold standard) is prepared from each batch.
b. All meals are apportioned on plates, garnished according to specified standards, wrapped and color coded.
c. All food items (including left overs) are wrapped, dated by month and day, placed on the appropriate trolley in the designated refrigerator.
d. A daily check is carried out in all refrigerator for quality, expiry dates and date coding to ensure FIFO system is followed.
e. All food is properly handled to prevent cross contamination as set out in the HACCP procedures.
a. Clean work station is maintained and tables are cleaned and sanitized after each task.
b. Sanitising solution is available at all work stations and all ancillary utensils (knives, spoons, peelers, etc.) are kept in a sanitising solution at the correct concentration at all times following HACCP procedures).
c. Used equipment is placed in the pot wash area to be washed by Custodians.
d. All spills are reported and wiped up immediately.
e. Necessary precautions are taken in the use of hot oils, gas burners, etc. ensuring that all ovens and burners are properly turned off at the end of the shift. Ovens should not be left on when not in use.
g. All safety and hygiene regulations are adhered to at all times.
h. All equipment is handled with care and according to manufacturers’ specifications.
i. All kitchen equipment is monitored and any malfunctioning is reported to the Executive Chef/ Supervisor, immediately.
j. All standards of personal hygiene established by the company are adhered to - uniforms, hair coverings, jewelry, hand washing, etc.
